Title:	Food, integration and change of perspective. Future challenges of eating behavior Alimentación, integración y cambio de perspectiva. Retos futuros del comportamiento alimentario

Description:	It is an undeniable fact that perception of reality is a product of the perspective with which it is approached and analyzed. In this sense, study and research of feeding behavior as an emerging area of science is based on a multi, trans and interdisciplinary perspective, which allows addressing food phenomena from an extensive and detailed vision, thus ensuring scientific certainty. However, this ability to address food phenomena from this broad perspective has only recently been achieved, and the resistance to continue with unidisciplinary visions is still latent. The present article establishes as a reflection, the need to create a change in the general scientific perspective, in order to ensure an adequate understanding of the phenomena of nature. It describes the particular case of a group of researchers who have undertaken a systematic effort to implement a comprehensive and articulated approach to the food phenomenon. Es un hecho innegable que la percepción de la realidad es producto de la perspectiva con la que ésta sea abordada y analizada. En ese sentido el estudio e investigación del comportamiento alimentario como área emergente de la ciencia están sustentados en una perspectiva multi, trans e interdisciplinaria, que permite abordar los fenómenos alimentariosdesde una visión extensa y detallada; con ello se asegura la certeza científica. Sin embargo, esta capacidad de abordar fenómenos alimentarios desde esta amplia perspectiva se ha logrado recientemente, y las resistencias por continuar con visiones unidisciplinarias son aun latentes. El presente artículo establece como reflexión, la necesidad de crear un cambio de perspectiva científica general; esto para asegurar una adecuada comprensión de los fenómenos de la naturaleza. Se describe el caso particular de un grupo de investigadores que ha emprendido el esfuerzo sistemático para implementar una abordaje extenso y articulado del fenómeno alimentario.
